I see some boats still keep a foot operated water second outlet in addition to the pressure outlet in the galley. Given the small area worksurface is there merit in this?

Given the relatively small amount of water that can be held in the under floor tank a foot pump makes sense as less water will be used.  Really easy to ease water when it's pressurised.

I have both pressurised water for Galley and heads and a foot pump at the galley, in reality I rarely use the pressurised system but is most useful if I want to empty the tank quickly when going racing as I open the heads tap and second and it all drains away with no pumping.

I have a foot operated switch just in front of the Sink. Still working out how the electric pump etc are plumbed in as most of the system has been disconnected.

In fact the foot operated ‘thing’ is a pump! The tap in the Heads seems to have a micro switch as there is a chopped off wire. I think a micro switch in the heads tap energises the pump when the tap is opened - there is a chopped off wire attached. My set-up seems to match what George was saying ie the minimise water consumption in the Galley just use the foot pump and the heads basin via the pump (not used a huge amount).
Whilst having a cup of tea this afternoon I was musing the possibility of fitting a Shower in the heads as the compartment + roll up curtains at the fsle and on the Hanging Locker would make it pretty much the same as a domestic shower. However then I thought to myself that would mean increasing the stored water and installing a calorifier in the Engine cooling circuit!
